Bistro 8, the latest hotspot from Shōwa Hospitality (the masterminds behind Hiden), opened its doors earlier this month, and it’s already stealing hearts—and palates. Nestled on Calle Ocho, this chic new spot marries Mexican soul with French finesse, courtesy of Chef Pancho Ibáñez, formerly of Pujol which famously earned two Michelin stars. Think Latin comfort food with a haute-cuisine twist, all under the glow of the restaurant’s colorful yet elegant decor.
